“Vada pav” in Maharashtra usually served on a recycled newspaper sheet, can be a snack, appetizer, a complete lunch or a dinner on the run or just sitting on a parked scooter or a bike. The taste is so complex that it doesn’t require any condiments to support its taste.

“Pav Bhaji” originated in Mumbai in 1850 they say, it was introduced more like snack on the streets of Mumbai that hosted 100s of mills that employed 100s of thousand of people who worked in 2-3 shifts all over Mumbai. Workers had short break and opted to eat pav bhaji that was made of several vegetables and served with 2 grilled buttery pieces of bread rolls called pav. It had just 400 calories so the portions were just enough to be eaten as a snack and indulged on the streets, at chowpati, under the shed, standing up, on the wooden benches or lounged in stackable plastic chairs. Served with diced raw onions, 1/8th slice of lemon and a tissue paper. Times have now changed and it’s now served from streets to all the way at world renowned hotels and upscale restaurant establishments around the world.
